When the bat signal shines over your Halloween Night, serve this Bat Broth to keep the vampire bats at bay. Its' delicately balanced notes of cardamom, coffee and hibiscus, completed with a hint of Scorpion spice, will leave you asking for seconds.
This cocktail is garnished with water caltrop, also referred to as Bat Nuts, for the ultimate spooky accompaniment. These are actually water chestnuts and have an edible "meat" inside, similar in texture to a chestnut. Crack open the hard shell and scoop out the meat from each horn to enjoy an unexpectedly delightful snack!
2 oz tequila
½ oz Hibiscus Cardamom Syrup
½ oz Espresso Syrup
1 barspoon Absinthe
2 - 4 dashes Scorpion Bitters, to taste
3 dashes saline water
Black Hawaiian Sea Salt for rim
Bat Nuts (Water Caltrop) for garnish (optional)
Add water caltrop to a pot and cover with water.
Bring to a boil, and allow to boil for 20 minutes.
Drain water, rinse well, and allow to cool.
Carefully use a sharp knife to cut a slit in the bottom of the bat nut so they will sit on the rim of your glass. Set aside.
Mix together a bit of light corn syrup or honey and red food coloring.
Dip the rim of each glass into the red mixture, then into black Hawaiian salt to rim.
Place a Bat Nut onto the edge of each glass and set aside.
Combine all ingredients from tequila through saline water in a cocktail shaker.
Add ice and shake well to combine.
Strain into your prepared glass and enjoy with an evil laugh or two.
