When we think of a light, refreshing yet sophisticated cocktail, the Paso Club is one of the first things that comes to mind. This lovely blend of berry flavors and fresh citrus is beautifully balanced with herbaceous gin and a bit of dry vermouth. It's almost like a blend between a martini and a sour, with a gorgeous, foamy egg white (or aquafaba for a vegan option) top and a presentation to die for.
1.5 oz gin
0.5 oz dry vermouth
0.25 oz fresh lemon juice
0.75 oz Blackberry Pomegranate Syrup
1 egg white (or substitute aquafaba)
Dry shake the spirits, lemon juice, syrup, and egg white in a cocktail shaker without ice.
Add ice and continue to shake until the shaker is frosty.
Strain into a chilled coupe glass, and garnish with mint and fresh blackberries.
