Start by lightly muddling the mint with the Peach Hibiscus simple syrup in the bottom of a Collins glass. Add the lemon juice, bourbon and ice, then top with soda water.
Toss the cocktail into the bottom of a cocktail shaker to mix all the ingredients together, then slowly pour it back into your glass. Garnish with more mint.
