We talk a lot about porch cocktails here, and that's probably because it's such a classic Southern experience - to sit on your porch in the hot Summer and offer your neighbors a sweet tea or a cocktail is just something you do. But we don't do it as often as we should, and these cocktails inspire us to do it more. The Pimms Cup is a porch-sipping cocktail if we ever saw one - tall, cold, and full of fresh Summer flavor.
This cocktail looks really beautiful if you throw some fresh strawberries and basil in with your cucumber, but if you're just looking for the flavor, the syrup alone will do the trick.
Skip the Pimms and gin and add 2 oz iced black tea
Place your cucumber slices in a Collins glass, add your lemon juice and simple syrup, and muddle to your liking.
Add the gin, Pimms, and ice, then top with soda water.
Use the bottom of a shaking tin to toss the cocktail back and forth a few times to mix.
Garnish with a cucumber slice.
