Pineapple Jalapeño Margarita: I recently tried this with Soul cachaça, and it was outstanding! Something about the richness of the cane sugar cuts through the jalapeño in a way that balances the jar quite nicely and tamps down the spice a bit. As you can infer, then, rum is outstanding with this jar. I will always favor aged/spiced over white, but it's up to your tastes. And of course, a good reposado or añejo tequila is a categorical winner.

Tropical and refreshing, bright and sweet, just like those deep summer afternoons we all love.

• Infuse the jar with 12 oz cachaça (I used Soul in my experimentations, and it’s yielded great results)

• Wait three days, plan your vacation, and strain

• Into a tall glass filled with ice, combine:

  • 2 oz infused cachaca, strained

  • 2 oz pineapple juice

• Top with ginger beer, stir well to combine, garnish with a pineapple wedge and Tim tim!
